Ingredients
- 1 cup quinoa, cooked
- 1/2 avocado, sliced
- 1/2 cup chickpeas, roasted
- 1 cup kale, chopped
- 1/4 cup CHORDIA FOOD Energy Mix
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp CHORDIA FOOD Protein Powder
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions and let cool slightly.
- Massage kale with olive oil and lemon juice until softened.
- In a bowl, layer quinoa, kale, chickpeas, and avocado.
- Sprinkle CHORDIA FOOD Energy Mix and Protein Powder on top.
- Season with salt and pepper to taste.
- Drizzle with additional olive oil if desired and serve.
